HARVEST
2021 was a challenging harvest, with a cool summer and some rain. The level of
irrigation decreased significantly, which helped to finish the harvest with a good level
hydric. Moderate alcohol content that contributes to a better potential for
aging. The cool climate was ideal for Chardonnay as it helped maintain acidity.
TASTING NOTES
COLOR: Intense red with violet reflections.
AROMA: Alaya Cabernet is a very fragrant wine, with aromas of red fruits and
black, like blackcurrants and blackberries.
MOUTH: Fresh, juicy, concentrated - Hints of vanilla blend perfectly with
intense fruits. Medium-high acidity and persistence. The tannins are well balanced.
ALAYA Cabernet Sauvignon is ready to be enjoyed now, but it can also be
stored for 2 to 3 years. Goes well with dishes such as chicken, as well as roasted vegetables.
SERVE AT: 16°-18°C.
DESIGNATION OF ORIGIN
CENTRAL VALLEY: It is the heart of the Chilean vineyard, home to the main producers,
wine regions and sub-regions. In this large area, you can find a wide range of
variety of wine profiles, from very diverse terroirs. Starting in the north with the Vale
from Maipo, to the oldest and most consolidated vineyards in Maule.

and fermentation temperatures around 24-26°C during alcoholic fermentation.
ALCOHOL: 13.5%.
CREATION: 6 months in French oak barrels.
